Introduction
This is a great way to "balance the table" when it comes to kid's eating habits. The tofu adds a great hit of protein, and if you stir in some peas or (my favourite) chopped tomatoes, it's a complete meal! Ingredients

12 oz whole wheat elbow macaroni
12.3-ounce package low fat silken tofu (Mori-Nu or similar)
1 tbsp unsalted butter
1 cup grated "old" cheddar cheese
Directions
Cook the macaroni to al dente and drain, but keep hot.
Puree the tofu until perfectly smooth.
Pour into a large saucepan, add the butter and cheese.
Heat, stirring often, over low heat until the cheese is thoroughly melted.
Add the cooked macaroni to the sauce, stir together well and serve.
