A quick and easy low fat recipe. I am being pretty loose with the prep time. How long does it take to peel and dice? How long does it take to mash? Ingredients

    4 cups potatoes, peeled and cut into chunks
    1/2 cup milk
    2 tablespoons mince garlic
    1 1/2 cups plain yogurt
    Salt and pepper to taste

Directions

In a microwave-save dish, place potatoes and milk. Cover tightly and cook on high for about 12 minutes, potatoes should be tender but not mushy. In a separate bowl mix yogurt and garlic together.

When potatoes are done, remove from microwave. Add yogurt mixture and mash. Season with salt and pepper. Garnish with parsley.
