Ingredients

    1.5 c chickpeas / 1 can drained
    1/2 c diced red onion
    1/2 c diced celery
    1/2 c diced red bell pepper
    1/4 c diced fire roased red peppers
    1tbs xtra virgin olive oil
    1 tbs white balsamic vinegar

Directions

Drain liquid form chickpeas. Combine all ingredients in bowl. Salt & pepper to taste. Refrigerate for at least 1 hour before serving.
