Ingredients

1 head, large (6-7" did) Cauliflower, steamed
1/2C Fresh Parmesan
1 1/2 C Italian flavored Panko Bread Crumbs,
1/2 C Cajon flavored Panko Bread Crumbs
1 large Egg
1/2 tsp Coriander
Salt and Pepper to taste*
Tips
*Optional - The bread crumbs should have enough flavor so that salt and pepper is not needed.
I used my Beef Jerkey press (cookie press) to make the tots, but you should be able to easily form small balls, even though the mix is soft.
Directions
Cut up and team cauliflower until soft, but not limp. Drain water, add coriander, and let cool for a bit.
Once it's cooled, place in blender and puree. Mix in bread crumbs, egg, and parm. Form into tots on sprayed cookie sheet, and cook on 425 for 10-15 minutes.
