Ingredients

1 tsp. active dry yeast
1/2 cup warm water
1 cup whole-wheat flour
1/2 cup white flour
8 slices bacon, diced
1 large onion, diced
1 tbsp. chopped fresh rosemary
1 red chili, diced (or flakes, to taste)
1/2 cup white wine
3 tbsp tomato paste
3 oz. soft goat cheese
3/4 cup shredded parmesan
3 tbsp. tomato paste
Directions
Sprinkle the yeast on the warm water and let it proof for 10 minutes. Meanwhile, measure your flour into a bowl, make a well in the centre. Add the yeast mixture and oil to the well. Mix until a soft dough forms.
Turn out and knead until smooth and elastic, adding more flour if necessary. This should take about 8 to 10 minutes depending on the gluten levels in your flour.
Put the dough back into a greased bowl, cover with a dish towel and allow to rise until double in volume. Punch the dough down and shape into an 11" by 17" oiled baking tray. Cover with a tea towel and allow to sit for an additional 30 minutes.
Preheat oven to 475 degrees. Put bacon into a pan. Fry until almost crisp, drain off most of the fat and add the onions and rosemary. Cook until onions are softened to your liking. Add wine and allow to reduce. Mix in the tomato paste.
Spread the bacon mixture over the dough. Top with bits of the goat cheese and the parmesan.
Bake for about 10 to 15 minutes. Allow to cool a couple of minutes before eating. Cuts into 8 pieces.
