Ingredients

.5 cup Coconut Butter
.5 cup Coconut Oil
.5 cup Coconut, Unsweetened, grated
.25 cup Cranberries, dried, sweetened (I use organic, sweetened with apple juice)
1 bar - Lindt 85% Cocoa Extra Dark
Stevia to taste (I use NOW Coconut flavored)
Tips
- you can substitute coconut oil for peanut butter, or other nut butters. just make sure that you have more of the coconut butter to hold it all together.
Directions
- place all the ingredients (except the chocolate) in a food processor / high powered blender. mix.
- it's OK if it gets a little runny during this process.
- spoon into silicon ice-cube trays or silicon candy trays. leave space so you can top with the melted chocolate
- place coconut mixed in fridge / freezer for 5 / 10 minutes to set
- melt chocolate either in a double boiler or low setting in microwave. sweeten to taste with stevia
- spoon melted chocolate over coconut mixture
