Ingredients

3 large Egg, fresh, whole, raw
1 cup, chopped Kale
.5 medium (2-1/2" dia) Onions, raw
.25 cup, pieces or slices Mushrooms, fresh
2 serving Yellow Bell Pepper, 1 serving equals 1.8 oz or about 10 strips
1 tsp Salt
.5 tbsp Lard
Tips
Leave out onions and bell peppers for a very low carb meal--add in any yummy meat to increase protein and fat!
Directions
• In a large, deep skillet, sauté diced onions and sliced mushrooms in cooking fat (substitute for a vegetarian friendly meal) until onions are translucent and mushrooms are soft
• Add diced bell pepper, any color and sauté briefly
• Pour 3-4 large beaten/whisked eggs over well distributed veggies
• Add spinach or kale over top of eggs
• Cover with a tight fitting lid until greens are wilted and eggs are cooked through
• Fold and eat as an omelette, or slide whole onto your plate to eat as a frittatta
