Ingredients

    4 serving Bacon, Aldi Roseland 2 slices (by NAPPYHEADED)
    4 cup Roasted broccoli 3-4 cups
    .5 medium (2-1/2" dia) Onions, raw
    2 cup Aldi's Happy Farms Shredded Mild Cheddar Cheese (1/4 C)
    0.25 cup Aldi Priano Freshly Shredded Parmesan Cheese (by TABZ89)
    2 tbsp Butter, salted
    2 tbsp Bob's Red Mill Coconut Flour (by BABYHUNT)
    16 tbsp countryside creamery heavy whipping cream (by KYPATTON)
    3.5 cup Swanson Chicken Fat Free Chicken Broth Less Sodium
    2 tsp Garlic
    .25 tsp Pepper, red or cayenne

Tips

Very good warmed up.


Directions

Roast broccoli. Cut bacon into small pieces and brown in pot. Drain off all but 3 Tbsp of fat, add butter, when melted add chopped onion and garlic. Add coconut flour and brown. Add 1/2 cup heavy cream and stir frequently. Add remaining liquid and stir until reduced some, then stir in cheeses. Add back broccoli and bacon, and use immersion blender to make chowder consistency. Add salt and cayenne. Split into 6 equal servings.
