Introduction

Lemon Squares Lemon Squares

Ingredients

    Crust:
    1 c. flour
    1/4 c. confectioner sugar
    1/2 c. butter

    Filling:
    2 eggs
    3/4 c. sugar
    3 tbls lemon juice
    2 tbls flour
    1/2 tsp baking powder

    Additional confectioner sugar to sprinkle on top

Directions

Stir together flour and confectioner sugar; cut in butter until mixture clings together. Pat into an ungreased 8 in. by 8 in. baking pan; bake at 350 degrees for 10-12 minutes. Meanwhile, beat eggs in mixing bowl; add sugar and lemon juice and beat until thick and smooth. Stir together flour and baking powder; add to egg mixture. blending until all ingredients are moistened. Pour egg mixture gently over baked crust layer. Bake at 350 degrees for 20-25 min. Cool slightly. Sift confectioner sugar over top. Cool completely; cut into 12 servings.
