Ingredients

300 grams Anelli quinoa pasta (or quinoa pasta shells)
425 grams Pumpkin, cooked
1 large Peppers, sweet, red, fresh diced
1 small Onions, raw diced
0.5 cup Hemp bliss / organic original
1 stalk Broccoli, fresh finely chopped
Directions
Cook the pasta as per instructions. Set aside.
Purée cooked pumpkin in food processor. Add the hemp bliss milk and 1 cup of the water from the pasta. Set aside.
Sauté the onion, pepper and the broccoli. Lower the heat, gently pour the pumpkin purée over the veggies and stir. Add the drained pasta.
Serve warm
