Ingredients

    9 large Egg, fresh, whole, raw
    1 pepper, large (3-3/4" long, 3" Yellow Peppers (bell peppers)
    .5 sweetpotato, 5" long Sweet potato
    8 oz Turkey, Ground turkey, 93% lean
    1 medium (2-1/2" dia) Onions, raw

Directions

Heat oven to 375°. Brown turkey with preferred seasoning. Chop potatoes, bell pepper, and onion. Break eggs into a bowl, and whip until fluffy. Spray a muffin tin well with nonstick cooking spray. Layer chopped potatoes into the bottom of each muffin cup. Next, layer ground turkey. Next, add the peppers and onions. Finish by pouring egg mixture into each cup until nearly full.
Bake for 35 minutes or until a fork inserted into the middle comes out clean.
