    4 Sweet Potatoes, about 4 oz each
    2 tsp Extra Virgin Olive Oil
    1/2 tsp Garlic powder
    1/2 tsp paprika, smoked
    1 dash Pepper, black
    1 cup Mozzarella Cheese, part skim milk
    1/2 medium Onions, sliced or diced
    1/2 Med. Green Bell Pepper, sliced or diced
    1 cup sliced Mushrooms, fresh
    1/2 tsp Oregano, ground
    1/2 cup Tomato Sauce
    4 tbsp Black Olives, Sliced
    8 oz Turkey Sausage 93% lean


Preheat oven at 450 degrees and spray half of a cookie sheet with cooking spray. Wash and pat dry sweet potatoes. Cut off the ends. Using a sharp knife cut each sweet potato lengthwise into 1/8 of an inch thick slices. Add to a large bowl. Drizzle with olive oil and add garlic, smoked paprika and pepper. Toss gently to coat. Lay potato slices in a single layer lengthwise, making sure they overlap by 1/8 of an inch.
Add veggies. Spread all of the veggies except black olives on top of sweet potatoes and spray with cooking spray, and sprinkle with a pinch of black pepper. Bake on the middle oven rack for 20 minutes and then broil on high for 10 more minutes, turning the sheet half way through broiling.
Preheat large non-stick skillet on medium heat and add turkey, oregano and pepper. Cook for 10 minutes or until golden brown and crispy, stirring occasionally and breaking into pieces.
Remove from oven and sprinkle with 1/2 of the cheese, making sure majority of cheese shreds cover the seams. This way cheese will act as a glue and help form the crust. Drizzle tomato sauce on top. Sprinkle black olives on top of cheese. Cover with remaining cheese. Return pizza to oven and broil on high for 8-10 minutes or until cheese is bubbly and golden, turning the sheet half way. Cut into 6 slices and serve hot or cold.
