Introduction
Kind of like a Lara Bar Kind of like a Lara BarNumber of Servings: 10
Ingredients
-
1 cup, pitted, chopped Dates
0.25 cup Almond Butter
0.25 cup whole kernels Almonds, dry roasted
4 tbsp Baker's Angel Flake Coconut (by MAGIC28BALL)
1.5 serving Bob's Red Mill Whole Ground Flaxseed Meal, 2 Tbsp.
Directions
Place all ingredients into a food processor and blend for one to two minutes or until everything is evenly combined and just about smooth. You may still have a little crunchy pieces of almonds remaining.
Line a 9' x 5' loaf pan or a small dish with parchment paper and press bar mixture evening into about half the pan. Refrigerate for at least an hour so the mixture sets. Once chilled, cut into bars and store in the refrigerator.
Notes: I suggest storing these in the refrigerator to maintain their consistency. The original recipe said to let them chill for 45 minutes but when I cut into them, some of them crumbled apart so chilling them for a longer is a MUST if you want to keep them intact.
Serving Size: makes 10 bars
