Ingredients

    12 oz Tyson boneless, skinless chicken breast
    1 tbsp Extra Virgin Olive Oil
    0.5 tsp Paprika
    0.25 tsp Salt
    2 dash Pepper, black
    2.5 stalk, large (11"-12" long) Celery, raw
    0.5 cup Red Onion Raw (1/4 cup, 40g or 1.4oz)
    0.35 cup Greek Yogurt, Plain Kirkland Brand
    0.05 fl oz Lemon Juice
    0.25 cup Cranberries, dried, sweetened (craisins)
    0.25 cup, chopped Walnuts
    5 cup Spinach, fresh

Directions

Coat chicken in olive oil, paprika, salt, and pepper. Cook in pan until browned. Shred chicken. Slice celery, dice onion, and chop nuts. Combine in bowl. Add cranberries and chicken; stir to combine. Mix in yogurt and lemon juice, and season with a dash of salt and pepper. Refrigerate. Serve on a bed of spinach. Serving Size: Makes 5 salads
