Ingredients

1 cup basmati rice
1 1/2 cups cold water
1 tbsp canola oil
1 tsp black or yellow mustard seeds
2 tbsp slivered almonds
2-3 tbsp lime juice
2 tbsp chopped cilantro
1 jalapeno pepper seeded and minced
1/4 tsp tumeric
1/4 tsp salt
Directions
1. Rinse measured rice 2 or 3 times to remove extra starch than drain. Place the drained rice in a saucepan and add 1 1/2 cups of cold water and let it sit for 30 minutes.
2. Bring water & rice to a boil uncovered over high heat stirring occasionally. Let water reduce slightly below rice level. Turn heat to low and place a lid on the sauce pan and simmer for 20 minutes.
3. Meanwhile, heat oil in a small skillet over medium-high heat, add mustard seeds. When the seeds begin to pop, cover the skillet until the popping stops. Reduce heat to medium and add almonds, cook until golden brown. Remove from the heat and add lime juice, cilantro, chillies, tumeric and salt. Add the mixture to the cooked rice, mix well.
