Ingredients

6 oz vermicelli
1/4 cup soy sauce
1/4 cup vegetable broth
2 tbsp peanut butter
1 fl oz lime juice
1 tsp garlic
1 tsp grated ginger root
1 tsp crushed red chili pepper flakes
10 ounces boneless/skinless chicken breast, shredded
1 red bell pepper, sliced into thin strips
3 green onions, sliced on diagonal in 1/2-inch pieces
Tips
Not sweet like Pad Thai, but savory with a little heat.
SO QUICK to make. I like to spinkle about 1 tbsp chopped peanuts on top. (Not counted in nutritional information.)
Directions
1. Cook noodles
2. Combine soy sauce, broth, peanut butter, lime juice, ginger and crushed red pepper in medium saucepan. Cook over med low heat until peanut butter is melted.
3. Add drained pasta to pan and coat evenly with sauce.
4. Stir in cooked chicken, sweet red pepper, green onions.
5. Serve with lime wedges.
