These can also be used as a burger bun, bread alternative and are great for kids snacks!

You can use other types of kumara or sweet potato however the red offers the most consistent results. Golden kumara is next best. Orange kumara is wetter so may require adding a small amount of almond flour to help bind.

Ingredients

    1.5 cup, cubes Sweet potato
    .25 cup, shredded Cheddar Cheese
    1 medium Egg, fresh, whole, raw
    1 dash Salt
    1 dash Pepper, black
    1 tbsp Coconut Oil

Directions

Combine ingredients and panfry in small fritter sized amounts for around 2mins each side.

Take care not to burn.
