Introduction

This is the first of a series of 100 calorie breakfast foods that I will be adding. I can mix and match two or three different recipes to add variety to my breakfasts and still be around 300 to 400 calories. Ingredients

    1 tbsp. shredded Cheddar Cheese
    1.25 cup Cheese, Mozzarella, Part Skim
    6 large Egg, fresh, whole, raw
    15 Jalapeno Pepper Slices, Pickled
    Dash Salt
    Dash Pepper, red or cayenne

Directions

Preheat oven to 350 degrees. Dice jalapeno slices. Lightly spray or grease muffin tin. Add an even amount of the mozzarella, and cheddar cheese to each section of the muffin pan. Add jalapenos, a dash of red pepper, and a dash of salt. Beat the eggs well. Add the eggs over the mixtures in the pan. gently stir each section being careful not to disturb the greased edges. Bake at 350 degrees for 20 to 25 minutes. Cool slightly. Run a knife around the edges and gently scoop the bottom with a spoon to release. Serve. You can freeze any remaining "muffins".
