Ingredients
-
3/4 cup Milk, 2%
1 large Egg, fresh
1/4 tsp Nutmeg or cinnamon
1/2 tsp Salt
1/2 tsp Vanilla Extract
2 Bananas
3/4 cup, chopped Walnuts
2 tsp Baking Powder
2 Tblsp. packed Brown Sugar
1 1/2 cup Whole Wheat Flour
1/3 cup Butter, salted
Tips
I did not follow directions but just mixed everything up. They were a little heavy and dense, but I loved them with a little butter and maple syrup. Next time I will be more careful to follow the directions to see if they are lighter.
Directions
1. Turn on waffle iron between medium and hot.
2. Stir dry ingredients & nuts. Make sure there are no clumps.
3. Melt butter. Add milk & heat until lukewarm. Stir in mashed banana, beaten egg, & vanilla.
4. Combine wet & dry ingredients. Stir just until combined. May have tiny bumps. Laddle or pour batter into middle of hot waffle iron, enough to cover about 75 percent of surface area. Cook until waffle iron heats back up to temperature & waffle is done.
5. May serve immediately.
Serving Size: Makes approximately 5 waffles.
