Ingredients

454 grams Beans, pinto
3 cup Swanson Chicken Fat Free Chicken Broth Less Sodium
6.7 serving Bacon, John Morrell, Hardwood Smoked Bacon (2 slices/17g)
8 oz Chorizo, pork and beef
3 medium whole (2-3/5" dia) Red Ripe Tomatoes
1 tbsp, crumbled Bay Leaf
1 tsp Cinnamon, ground
2 small Onions, raw
100 grams Cilantro, raw
3 pepper Serrano Peppers
1 tsp Lime Juice - ReaLime 100% Lime Juice
1 tsp Salt
Directions
Soak beans in pot …cover by 4” of water…overnight
Drain and add fresh water to cover by 4”
Pin the bay leaves to the onion halves with the cloves, and add to the beans.
Gradually, bring beans to a boil. Reduce heat and simmer gently, loosely covered until tender. Beans should be soupy but not watery.
Add a little salt and pepper
Meanwhile in a skillet, heat the oil. Fry chorizo until browned.
Add bacon, fry until browned
Add chopped Onion and garlic…cook about 3 more minutes
Add tomatoes, serranos, lime juice and cilantro. Cook until tomato juices have evaporated.
Stir the mixture into the beans. Simmer 10 minutes. Salt & pepper to taste
Serve in small bowls (to hold the broth) or serve over rice. Garnish with cilantro.
