Delicious Shrimp Salad with Cilantro/Lime Dressing Delicious Shrimp Salad with Cilantro/Lime DressingNumber of Servings: 4
Ingredients

1 Lime (2" dia)
1/4 tsp Pepper, red or cayenne
2.1 tbsp Olive Oil
1 lb. Large Uncooked Shrimp, peeled & deveined
2 Avocados without skin and seeds
1 large Tomato, cut into chunks
1 small sweet Onions, raw
1/2 Cup Cilantro, raw
1/8 teaspoon ground coriander
Directions
For the Salad
1. In medium bowl mix 1 tsp. oil and 1/4 tsp. salt, toss the shrimp.
2. Grill shrimp over medium heat 3 to 4 minutes or until color changes, turn once halfway through. (Directly on the grill or nonstick saucepan) Remove to a plate to cool, about 5 minutes.
3. On a large salad bowl put shrimp, and the rest of the ingredients. (Avocados slices, tomato chunks, sweet onion slices)
4. Drizzle the lime dressing on top with cilantro and mix.
For Lime Dressing
1. Zest the lime (1.5 tsp.)
2. Juice the lime (3 to 4 Tbsp)
3. In small bowl combine Zest, Juice, Cayenne, coriander, and 1/4 Tsp. Salt, 1 tablespoon finely chopped fresh cilantro.
4. Whisk 2 Tbsp. Olive oil slowly until combined
