Introduction

Borrowed from various other recipes, to get a hearty meatloaf muffin. I used 80% ground chuck, and Sara Lee Delightful bread, you can adjust these as you like. Ingredients

    2.0 large Egg, fresh, whole, raw
    1.0 tsp Horseradish
    1.0 cup Applesauce, unsweetened
    0.5 cup, chopped Onions, raw
    0.25 cup Catsup
    2.0 serving Old Fashioned Quaker Oatmeal- Plain (1/2 cup dry)
    4.0 serving Bread, 45 Calorie & Delightful, 100% Whole Wheat, Sara Lee, 1 slice
    32.0 oz 80/20 ground beef chuck

Directions

Preheat oven to 400F. Assemble ingredients. Prepare muffin pans. (Spray each cup with cooking spray, if desired.) Mix all ingredients together by hand in a large bowl. Fill 18 muffin cups until level with rim. Fill remaining cups with 1-2 oz water each. Bake for 20-25 min. Do not let cool completely before removing from pan. 2 muffins is 1 serving. Serving Size: Makes 18 muffins, serves 9.
