Introduction

My first ever attempt at baking with a sourdough starter, these muffins rose perfectly, are low in fat and are a great spicy blend of sweet and sour!! Ingredients

    1 cup flour
    1 tsp baking soda
    1 tsp pumpkin pie spice
    1/2 cup brown sugar
    1 cup (active, 100% hydration) starter - feed 2-12 hours before
    1 egg
    1 tsp vanilla
    1 tsp maple extract
    1/2 cup unsweetened apple sauce
    1/2 cup raisins

Directions

Preheat oven to 400F, grease 12 muffin cups.
Whisk together the flour, baking soda and spice in a bowl.
Seperately, mix the brown sugar, starter, egg, vanilla, maple extract and apple sauce.
Gently mix the wet ingredients into the dry, just until mixed.
Fold in the raisins.
Bake 18 minutes.
Cool 3-5 minutes in tins, then turn out onto a rack and cool completely.

    Incredible!
    Used my regular sourdough starter and added 1 Cup of All Bran Buds to the recipe with no other changes. Made them a little smaller so I got 16 muffins instead of 12. Yummy! Next time I might soften the raisins and all bran buds in hot water before making the muffin batter. - 5/17/21

    5 star! Very good. So easy to track as the recipe makes 12. Do NOT use paper muffin liners - it sticks! Love it! As a loaf, bake 40 minutes. I add chia seeds, hemp hearts and ground flax seeds. This is my daily treat. - 4/6/21
