Ingredients

• 1 cup Vanilla 90% Protein powder
• 1 cup all purpose flour
• 1 cup sugar
• 1 tsp baking soda
• 1/2 cup unsweetened applesauce
• 1/2 cup soy milk
• 1 egg
• 2 bananas, mashed
• 1 bag (6 oz.) chocolate chips (*optional: you can replace these with carob chips or leave out altogether
Directions
1. Preheat oven to 350 degrees. Spray 12-muffin muffin pan with no-stick spray (or line with muffin cups).
2. Combine all dry ingredients in a large bowl and mix.
3. Blend egg, soy milk, banana and applesauce in a bowl.
4. Add liquid ingredients to dry ingredients. Mix until just moistened (if batter is too dry, add 1 tbsp of soy milk at a time until desired consistency. If batter is too runny, add 1 tbsp of flour at a time).
5. Stir in chocolate chips.
6. Spoon heaping tablespoon of batter into each muffin cup.
7. Bake at 350 for 25-30 minutes or until knife/toothpick comes clean when inserted in muffin. Remove from pans immediately and cool on wire rack.
