Ingredients

    0.34 oz Pink Salmon (fish)
    0.25 cup, chopped Onions, raw
    0.25 cup Bell Pepper, Green - 1 Cup, Chopped (by 16HEATHER)
    .5 oz 2oz Roma Tomato (by FSAMUEL6)
    0.25 cup Spinach, fresh
    .25 cup, pieces or slices Mushrooms, fresh
    .25 serving Mezzetta Pitted Greek Kalamata Olives (4 olives in a serving)
    .5 1tsp Olive Oil
    .25 serving Alcohol, Wine, Pinot Grigio 6oz

Tips

Directions

Finely chop all vegetables. Saute 1 minute in 1/2 tsp olive oil until soft. Saute salmon in the middle of the veggies, skin side down for 30 seconds; add white wine; cover and steam-saute for 4 minutes. Remove salmon to serving dish, and reduce veggie-wine sauce for 2 minutes. Dress salmon with sauce. Sea salt & pepper to taste. Serve hot or chilled with salad, fruit or couscous, rice or quinoa.
