Ingredients

    4 serving Unico Chick Peas, No Salt Added (Canada) (1 serving = 1/2 cup/125ml)
    6.37 serving Unico Crushed Tomatoes (Canada) (1 serving = 1/2 cup/125ml
    6.4 cup Coconut milk, lite, Thai Kitchen (by LESLEY210)
    6 cup, chopped Broccoli, fresh
    .33 cup Ancient Harvest Traditional Whole Grain Quinoa, 1 serving =.25 cup dry
    1 pepper, large (3-3/4" long, 3" Yellow Peppers (bell peppers)
    1 medium (approx 2-3/4" long, 2- Sweet peppers (bell)
    1 medium (2-1/2" dia) Onions, raw
    1 tsp Curry powder
    1 serving Tumeric - 1 tsp (by FREWTYL)
    1 tsp Allspice
    .33 serving From Japan Light Sweet Miso (Canada) (1 serving = 1tbsp/15g)
    15 gram(s) Fresh Garlic (1 clove = 3g) (by AMBUDMAN)
    6.25 cup, cubes Sweet potato

Tips

*I turned the slow cooker on high for the first 2 hours and then let it cook overnight for an additional 6 hours.

**recipe is vegan and gluten free

*** 6 cups sweet potatoes = about 3 large


Directions

1. In your slow cooker, place can of crushed tomatoes and coconut milk in first.
2. Add in prepared vegetables and spices.
3. Stir to thoroughly combine.
4. Set slow cooker to high and cook for 4 – 4.5 hours.
5. When finished, serve plain or over your grain of choice and top with finely sliced green onions.

Serving Size: Makes 10 servings
