Grease the muffin pans with cooking spray.

Mix in a blender:
1 bag of spinach
1 bag of shredded cheddar cheese
1 cup of skim milk
12 large eggs
Spoon into muffin or cupcake pan.
Bake at 350 degrees for 25 minutes.
