Introduction

Ingredients

    14 oz Pink Salmon - Wild Alaskan Salmon Skineless and Boneless Canned
    1 tbsp chopped Onions, raw
    1 dash Salt
    1 dash Pepper, black
    1 large Egg, fresh, whole, raw
    1 cup Bread crumbs, dry, grated, plain

Directions

Drain salmon. Discard skin. Pulverize bones and add to salmon to increase calcium content. Place crackers in Ziplock bag and roll with rolling pin to reduce to crumbs. Combine salmon, onion, salt and pepper. Add slightly beaten egg. Add enough cracker crumbs to form into patties. Fry in skillet over medium heat, using minimal oil (or non-stick spray) until browned on both sides. May be browned in oven at 350°F for 30-40 minutes. Servings: 6 to 8, varies by patty size. Our family likes these served with fried potatoes, creamed peas, cole slaw or applesauce.
