Number of Servings: 3

Ingredients

    1 lb bay scallops (80/120)
    10 cloves of garlic - crushed
    1/2 cup of chicken broth, separated
    3 TBLSP extra light virgin olive oil
    14 grape tomatoes - halved

Directions

In a large frying pan - put 1/4 cup of the chicken broth and the olive oil in the pan and heat up. Add the garlic and saute until golden, adding the chicken broth as the sauce evaporates. Add the scallops and saute together until the scallops are opaque. Remove pan from heat and add the tomatoes and toss lightly. Makes 3 - 4oz. servings.

I serve this with angel hair pasta which, if you add the pasta to the boiling water at the same time you add the scallops - it's all timed just about right.

    i love me some scallops.Mmmm. Wonderfully yummy. I used veggie broth in lieu of chicken broth. I like chicken broth, but my girls are trying not to eat meat/poultry products! - 8/5/08

    Incredible!
    It was fabulous, although I added some spice with Mrs Dash Extra Spicy and a shallot and a quarter of a sweet onion. But that is just my style, I can't cook without a lot of garlic or onion. I will be recomending this to my friends. - 7/24/08
