Ingredients

    1 tbsp Butter, salted
    1 large Onions, raw
    1.75 tsp Kosher Salt (by 65PLUS1)
    3 cup, chopped Carrots, raw
    3 cup, cubes Sweet potato
    2 large (3-1/4" dia) (approx 2 p Apples, fresh with skin
    2 tsp Ginger Root
    1 tsp Curry powder
    4 cup (8 fl oz) Chicken Broth
    .3 cup Cabot Low Fat Greek Yogurt Plain
    1 tsp unpacked Brown Sugar
    .3 cup, chopped Scallions, raw

Directions

Melt butter and onion and salt. Stir frequently until onion is softened 5-7 minutes. Add carrots, sweet potatoes, applies, ginger and curry powder, stir to combine. Add broth, stir to combine. Increase heat to high and bring to a boil. Cover pot and reduce heat to medium. Simmer 25-3o minutes. Stir in yogurt and sugar and remove from heat. Puree soup with immersion blender. Serve garnished with scallions.
