Ingredients

    1 cup Spinach, frozen
    1 cup, pieces or slices Mushrooms, fresh
    2 1tsp Olive Oil
    1 stalk, large (11"-12" long) Celery, raw
    .5 cup, chopped Onions, raw
    6 large Egg, fresh, whole, raw
    .5 cup Milk, 2%, with added nonfat milk solids, without added vit A
    .5 tsp Salt (table) (by CYNDYY1)
    .5 tsp Garlic powder
    .5 tsp Pepper, black
    .5 tsp Baking Soda
    0.25 cup Kraft 2% Shredded Cheddar Cheese

Tips

If you love meat, you may throw in any leftover meat into this. The veggie version makes a nice light lunch. Not sure about the baking time, because I cook it until it "looks right."


Directions

heat olive oil in nonstick skillet. add chopped celery & onion. Saute until translucent. Add mushrooms and spinach. Saute until wilted. Scramble eggs, add milk, spices and baking soda. Add egg mixture to pan and set the bottom of the eggs (not more than one minute). Put pan in preheated 300 degree oven. Bake until eggs are set. Sprinkle on cheese, put back in oven. Bake until cheese is melted well.
