Ingredients

    13.5 oz CALIFIA Farms Almond Milk (Unsweetened)
    0.12 cup Sauce - Thai Red Curry Sauce - Trader Joe's
    1.0 medium (2-1/2" dia) Onions, raw
    3.0 cup, cubes Butternut Squash
    3.0 cup, chopped Kale
    411.0 Grams Chickpeas (garbanzo beans)
    1.5 cup Vegetable Broth
    1.0 tbsp Soy Sauce
    2.0 tbsp Lime Juice, juice of 1 lime
    100.0 grams Cilantro, raw

Directions

In a pot, over medium heat, what together the curry and coconut/almond milk. Add the chopped onion and simmer until softened. Add the squash and chickpeas. Cover and bring to a boil. Lower the heat and add the kale. Cook until softened. Finish with lime juice and serve with cilantro. Optional, add red pepper flakes and serve with Jasmine rice.
