Number of Servings: 8

Ingredients

    2 boil-in-a-bag brown rice
    non stick cooking spray
    1 lb 93% lean ground turkey
    1/2 cup green onions(scallions), sliced
    1 can no salt added diced tomatoes, undrained
    1/2-1 whole jalapeno pepper, seeded and finely chopped*
    1 Tbsp chili powder
    1 cup reduced 2% Mexican 4 cheese blend
    1/4 cup fresh cilantro or parsley, chopped

Directions

Prepare rice according to package directions.Spray a large skillet with cooking spray. Crumble ground turkey into the skillet and cook over medium heat until browned. Add onion, sauté till tender. Stir in canned tomatoes, jalapeno, chili powder and rice. Simmer until liquid is absorbed, stir occasionally. Sprinkle with cheese and cilantro or parsley.

Serves 8

*when working with fresh hot peppers, remember to wear protective gloves to avoid skin irritation and avoid contact with eyes.

    Very Good
    Very tastey! I used fresh tomatoes, since I did not have any canned. They worked great, and it helps with cutting back on the sodium too. Needed a bit more spice for us, next time will add some ground cayenne as well. - 6/30/09
