Ingredients

4 cup fresh spinach
6 oz Ham - Off The Bone Ham, chopped into small pieces
1 cup, chopped Onions, raw
6 slices Swiss Cheese
6 Large Egg
1 cup Half and Half Cream
Salt and pepper to taste
Directions
Spray 6"x 9" casserole pan.
Chop fresh spinach and put half into pan; cover with cheese slices; add remaining spinach.
Saute onion and ham until onion is clear. Spread over spinach.
Beat eggs and cream; add seasoning; pour over everything.
Bake at 350 degrees for 10 minutes. Reduce heat to 300 degrees for 25-30 minutes or until center is firm. (I use convection heat.)
Cool and refrigerate it then divide into 6 sections. Heat one serving in microwave about 30-45 seconds.
