Introduction

Ingredients

    1 pound Asparagus, fresh ( trimmed cut in 1 inch pieces)
    48 oz (or 6 cups homemade) Broth (Swansons) Chicken 33% Less Sodium
    1 cup, chopped Onions, raw
    .5 cup, diced Celery, raw
    juice of one whole lemon
    .5 cup Half and Half Cream
    salt and pepper to taste

Tips

I love this hot or cold! You can serve with a crusty bread or as a light side with dinner. If you want it fat free, use fat free Half and Half or an extra half cup of chicken broth instead of regular Half and Half.


Directions

Spray a large (6 or 8 qt.) pan with PAM
Saute onion and celery for about 4 minutes until translucent
Add cut asparagus pieces and saute another 5 minutes
Add the chicken broth and simmer until asparagus is soft, about 15 min.
In 2 batches, put mixture in a blender and blend until all is liquefied. Our each liquefied batch into another sauce pan. Careful! It's hot!
Add the juice of a whole lemon and salt and pepper to taste. Sitr.
Add the Half and Half and stir. Heat just until boiling. And you're done!
