Introduction

Several years ago now, I found a vegetarian recipe riff on a favorite chicken sandwich served at whichever college or university the student "chef" attended. I have modified it slightly because it was so very high in sodium. It still comes out at almost 1,400 mg--which may very well exceed or meet your sodium limits for the rest of the day. Just watch your sodium in your other meals! Ingredients

    2 slice, medium (1/4" thick) Red Ripe Tomatoes
    1 serving iceberg lettuce, 1 medium leaf

    1/2 cup organic extra firm tofu
    1 6" whole wheat tortilla
    2 tbsp Marie's Chunky Blue Cheese Dressing

    2 tbsp Buffalo Sauce from Buffalo Sauce for Tofu Wrap recipe


Tips

You can follow the original recipe online and use the cheese, but I find it just adds calories,salt, and cholesterol. Also, the original recipe adds 1/2 cup Buffalo Sauce to the skillet and heats through after frying the tofu. The sodium content is outrageous! Don't do it! Directions

Toast tortilla over burner to warm, slice tomato, wash lettuce.

Fry Tofu Filling: If using water-packed tofu, drain first and press for 1/2 an hour. You can also freeze this tofu after this step and freeze it. That can be thawed and used immediately in this recipe; frozen thawed tofu has a very "meat" like texture, so this would really come close to the original to chicken sandwich. Draining and pressing is unnecessary if you are using tofu from a hermetically sealed package (such as Mori-Nu). In non-stick skillet, fry tofu cubes in scant amount canola oil until outside is crispy and firm, turning with tongs. When frying is finished, drain tofu cubes on plate covered by 2 paper towels.

Assemble the Wrap: Spread blue cheese dressing down center of whole wheat tortilla. Layer lettuce, and then tomato. With tongs, arrange tofu cubes on top of tomato/lettuce. Drizzle 2 TB prepared Buffalo Sauce over tofu. Roll wrap and eat.
