Ingredients

    1/4 cup whole raw almonds
    3 Mangoes, peeled and seeded
    1/4 ripe Banana
    3 dates or 1.5 medjool dates, pitted & soaked
    3 tbsp unsweetened shredded Coconut
    1/2 tsp Vanilla extract
    1/8 tsp Cinnamon

Tips

Soak the dates in some water, while gathering and preparing the other ingredients. The soaking makes it easier to pit and blend the dates.


Directions

Rough chop almonds and then put in a blender and grind some more to the point of dust. Then add mangoes, banana, dates, coconut, and vanilla to the blender. Blend until mixture is creamy and smooth, pudding-like.

Place in a serving bowl and refrigerate for at least 2 hours before serving to allow flavors to meld. Top with coconut, nuts/seeds, fresh fruit, and/or raisins/currants.
