Introduction
At thanksgiving, we have a baked ravioli called piconi (sp?) that is filled with egg, romano, and parmesan cheese. To make a keto-friendly snack, I baked up spoonfuls of just the filling, and yum! These turned out to be a great, satisfying snack. They puff up just slightly in the oven, and have a slightly chewy texture on the outside. Ingredients

1.0 large egg, beaten
0.75 oz Romano Cheese, grated (about 2 heaping Tbsp)
1.5 oz Parmesan Cheese, grated (about 4 heaping Tbsp)
Directions
Mix all ingredients well and use a spoon to drop onto a parchment-lined baking sheet. Use whatever spoon size you like. Teaspoon drops will result in a small bite-sized snack, and heaping tablespoons will spread to the size of a cookie. Bake in a 350'F oven until bottom and edges are slightly brown, then remove to a wire rack to cool completely. Store in the fridge for up to a week.
Eat these plain, dipped in a dip or dressing, or on top of a green salad.
