Introduction

Ingredients

    2 cups cooked, rotisserie chicken breast meat, no skin
    1/2 cup diced celery
    1/4 cup sweet white onion
    2 tbsp Lemon juice
    1/4 cup light mayonnaise
    1/4 cup slivered almonds
    1/2 tsp Thyme, fresh
    1 tbsp Parsley
    Salt & Pepper to taste

Tips

An interesting option is to add 1/2 c. Halved seedless grapes to the recipe. Serve it over fresh baby greens.


Directions

Lightly toast almonds, set aside to cool. Chop celery and onions finely. Cut chicken up into small pieces. Chop cooled almonds finely. Mix all ingredients together. Refrigerate an hour to blend flavors.
