Introduction

Sauce vierge is "virgin sauce" in French. You can use any mix of green fresh herbs - basil, chives, tarragon, parsley, chervil, cilantro. Sauce vierge is a true foundational mother sauce, one from which we can build many. Good spooned over grilled or sautéed mellow white fish, over lobster, scallops, a crab omelette, lamb chops, heaps of pasta, grilled chicken and tofu, poached eggs... Ingredients

    4 large whole (3" dia) Red Ripe Tomatoes
    1 cup Olive Oil
    1 cup Cilantro - fresh
    12 tsp Lemon Juice
    1 tbsp Salt
    2 cloves garlic (optional)

Directions

Cut up tomatoes so they're still small-chunky and let drain a bit in a colander. Chiffonade (roll & slice) herbs. Combine all in large Mason jar, shake and let sit at least 1 hour to develop flavors. Can be frozen.
