Ingredients

    1 cup, strips Green Peppers (bell peppers)
    1 cup, chopped Onions, raw
    1 cup cilantro (fresh) (by MINDTHEGAP7)
    .5 cup Lime Juice
    5 clove Garlic
    .25 cup Olive Oil
    1 cup, pieces or slices Mushrooms, fresh
    10 beans (4" long) Green Beans (snap)
    35 medium Shrimp, raw
    1 tbsp Soy Sauce

Tips

I like to leave mine in the broiler until the vegetables get a bit of char. This recipe also works great with chicken or pork and can be made with flour tortillas like soft taco's if you like.


Directions

Chop all vegetables into bite size pieces, peal and de-vein shrimp. Mince the cilantro and garlic and mix with lime juice, olive oil, soy sauce. Mix all ingredients and let marinade at least 20 minutes (2 hours is better). Then place on a pan and broil on high for 15-20 minutes until shrimp is fully cooked.
