Introduction

I tweaked a basic banana bread recipe to make it less fat and sugar than the original and added berries to it. Feel free to omit the butter all together and just add more pumpkin. You can add whatever berries you have on hand or omit them if they're not your thing. I have made this recipe with and without berries and it comes out great either way. Ingredients

    4 medium (7" to 7-7/8" long) Banana, fresh
    .5 cup, packed Brown Sugar
    .25 cup Granulated Sugar
    2 large Egg, fresh, whole, raw
    1.5 cup Flour - Gold medal all purpose flour
    .5 tsp Vanilla Extract
    1 tsp Baking Soda
    .20 stick Butter, salted
    .25 cup Pumpkin, canned, without salt
    .5 cup, sliced Strawberries, fresh
    .30 cup Blueberries, fresh
    .25 cup Raspberries

Directions

-cream together sugar, butter and pumpkin
-stir in beaten eggs
-mix in flour and remaining ingredients (mix the berries in last so they dont get mushy)
bake for about 25 minutes at 350 degrees
