Ingredients

    1 large Egg, fresh, whole, raw
    1 tbsp Chili powder
    1 tbsp Cumin seed
    1 tsp Salt
    1 1tsp Olive Oil
    1 clove Garlic
    2 cup, sliced Zucchini
    0.50 cup Tomato Sauce
    1 cup Great Value, Colby and Montery Jack cheese (fancy shredded)
    0.50 tsp Ground Cayanne Pepper
    1 serving Bob's Red Mill Almond Flour - per 1/4 Cup
    16 oz 90/10 Ground Beef Sirloin
    0.25 cup Bell peppers (Green, Red, Yellow, Orange)
    .25 cup, chopped Onions, raw

Directions

slice zucchini into 1/4 inch pieces
Mince garlic
Chop pepper and onion
Whisk egg in small bowl
place almond flower in another bowl
Heat oven to 350
Heat .5 Tbsp olive oil in skillet
Dip each zucchini slice in egg then dredge both sides in flower
add to hot skillet cook 3 minutes, flip cook 2-3 more minutes until golden
Remove zuchinni, wipe skillet and heat remaining oil
Add garlic onions and peppers, sautee 4 minutes until soft
Remove vegetables from skillet, wipe, return to heat
Cook ground sirloin until no longer pink, drain, add tomato sauce , peppers, onions and spices to skillet, cook 3 minutes
Put meat mixture in 13x9 oven proof dish
Top with Zucchinni rounds
Cover with cheese
Bake 20 minutes at 350 degrees
