Ingredients

    1 can of Rotel Tomatoes
    1 small can of tomatoe sauce
    6 Bell Peppers
    6 small Zuccini
    16 oz of Ground Turkey (prefer 97% fat free)

Directions

6 servings
Cook Ground Turkey in skillet, use PAM Nonstick & water, not oil. Season as desired. I like to use green onions, red onions, etc. Once cooked, add 1 can of Rotel tomatoes and Zuccini (sliced). Let simmer together until Zuccini is soft (mushy).
Cut tops of Bell Peppers, Boil whole for 10-15 minutes. Usually boil peppers while meat sauce is simmering.
Use a spoon with holes, to drain, and fill up bell peppers with meat mixture. Left over meat mixture, put around bell peppers. Use 1 small can of tomatoe sauce and pour over the top of each pepper. Fat Free Cheese can be added as well.

    excellent!!! I used ground deer meat and I also added the steak spice that zaphae recommended. My husband loved it. He wanted to eat all of it!!!! Will make again and it is also very healthy - 5/30/12

    made this today replaced carrots for zuccinni. and diced tomatoes and green chillies in place of rotel. used multi color peppers for variety. it came out wonderful thanks - 10/23/08

    Very Good
    I liked this. I did add some montreal steak spice and onion flakes to kick up the flavour, but will definitely make it again. - 7/3/08
