16.0 oz alligator meat
4.0 tbsp Olive Oil
1.5 cup Rotel diced tomatoes & green chillies
0.5 cup, chopped Onions, raw
0.5 serving 1 Med. Green Bell Pepper
0.5 tsp Curry powder
0.5 tsp Salt
0.25 tsp Cumin seed
0.25 tsp Paprika
0.25 tsp Garlic powder
0.12 tsp Pepper, red or cayenne
0.12 tsp Allspice
0.12 tbsp Chili powder
0.12 tsp Coriander leaf, dried
0.06 tsp Cardamom, ground
0.06 tsp Cinnamon, ground
0.06 tsp Ginger, ground
Directions
Cut alligator into bite size pieces. In a small bowl add spices together, mix well. Drizzle 1 Tbsp oil over meat add seasonings and massage together until well coated. Add 1Tbsp oil to pot and bring to medium heat. Add meat and brown, then add veggies and Rotel. Cook covered 30-40 min. Stirring occasionally.
