This creamy salad tastes like a summer day. This creamy salad tastes like a summer day.
Number of Servings: 4

Ingredients

    Salad
    2 chicken Breasts - cooked and shredded.
    2 large avocados
    1 cup corn (sliced directly from a cooked cob)
    6 oz of bacon, cooked and chopped
    1/4 cup of chives or green onion, chopped
    2T chopped dill

    Dressing
    3 T of lime juice, squeezed from fresh lime
    3 T of extra virgin olive oil
    1 t salt
    1/8 t black pepper


Tips

This is a great way to use rotisserie chicken.


Directions

1. Peel and pit the avocados, cut into bite size pieces and add to a large mixing bowl.
2. Stir in shredded chicken, corn, bacon, green onion and dill.
3. In a small bowl, combine the ingredients for the dressing and mix well.
4. Drizzle the dressing over the salad and mix gently to combine.


Serving Size: makes 4 generous servings
