Introduction

This is a great soup to make in large batches. It freezes well and is good in the summer or winter. It is super filling and healthy! Ingredients

    2 cup, chopped Onions, raw
    3 cup, chopped Cabbage, fresh
    2 cup, chopped Carrots, raw
    1 cup Chickpeas (garbanzo beans)
    1.5 cup Beans, red kidney
    .5 pepper, large (3-3/4" long, 3" Yellow Peppers (bell peppers)
    .75 cup Spinach, fresh
    1 can Canned Tomatoes
    8 oz canned tomatoe sauce (by SASSYSUZIE2)
    4 oz Pork Sausage, fresh, bulk, cooked
    .5 cup Orzo Pasta
    3 serving beef bullion cube (by NEZALHUALIXTLAN)
    4.5 cup (8 fl oz) Water, tap
    2 tbsp Canola Oil
    1 tbsp Basil
    1 tsp Parsley, dried

Tips

Serve up piping hot sprinkled with shredded parm cheese and warm bread.
Freezes well... keeps for several weeks (or even months if sealed properly).


Directions

Brown sausage. Add all chopped veggies and minced garlic to the meat and cook until crunchy tender. Add canned tomatoes and sauce as well as the kidney and garbanzo beans. Add bouillon and water. Stir and bring to boil. Cover and simmer about 10 minutes. Turn off heat and add orzo. Stir. Let it sit for about 15 minutes until the orzo is cooked. (Adding the pasta this way keeps it from getting mushy.)
