Introduction

Ingredients

    25 oz Shirakiku Japanese Udon Style Noodle, dry
    3 tbsp Kikkoman Lite Soy Sauce
    2 tbsp Oyster Sauce
    0.5 tsp Eden Selected Toasted Sesame Oil
    1 tsp Chili Garlic Sauce (Rooster brand), plus more for serving
    2 tbsp Canola Oil
    0.5 lb Baby Bella Mushrooms
    1.5 cup Snow Peas, fresh, trimmed
    1 tbsp peeled ginger minced
    2 Garlic cloves - minced
    3 large Scallions, julienned
    0.5 tsp Better Than Bouillon Reduced Sodium Chicken Base (All Natural) + 0.5C boiling water, mix to dissolve.


Tips

Additional veggies can be added, e.g. wok chop, napa cabbage, etc. Vegetable broth can be used instead of chicken broth to keep it vegetarian.


Directions

1. Cook noodles al dente, drain well, cool and drain well again.
2. While noodles cook, ombine chicken broth, with soy sauce, oyster sauce, sesame oil and garlic chili sauce.
3. In a wok or large nonstick skillet, heat oil. Add mushrooms and snow peas and cook over high heat, stirring occasionally, tis mushrooms are tender and browned, about 5 minutes.
4. Add ginger and garlic and cook until fragrant, about 1 minute.
5. Add udon noodles stirring and tossing for about 2 minutes.
6. Stir the sauce, then add to wok with scallions. Cook, stirring occasionally, until the sauce is absorbed and the noodles are browned in spots, about 5 minutes.
7. Serve right away, passing more chili garlic sauce on the side.
