Ingredients

    1 head, medium (5-6" dia) Cauliflower, raw
    2 clove Garlic
    1 medium (2-1/2" dia) Onions, raw
    2 medium Carrots, raw
    2 stalk, medium (7-1/2" - 8" lon Celery, raw
    4 cup Chicken stock, home-prepared
    1 cup Coconut Milk (Silk)
    1.25 tsp Cumin seed
    1 tsp ground tumeric (by INSPIREDBYCHJ)
    4 medium slices, cooked (raw pro Bacon, pork, microwaved
    2 tbsp Olive Oil

Tips

This soup is intended to be a chowder, but if you want a smoother texture, blend some or all until the consistency you desire. Take care if blending as ingredients are hot and can burn!


Directions

Chop garlic, onion, carrots, celery. Heat olive oil in a deep soup pot and add veggies. Saute til tender, about 5 minutes. Meanwhile, roughly chop cauliflower. To the veggies in the soup pot and continue sauteing until lightly cooked. About 5 minutes. Add in the chicken stock, coconut milk and spices. Stir well, bring to a boil. Reduce heat and let simmer for about 15 minutes, or til veggies are tender. Microwave bacon, crumble and serve as a garnish on top. Enjoy!
