I have had many compliments on this moist, chocolate cake. I use it quite a bit for birthdays or special occasions as it is so easy and you can do everything in one pan...so no mess! Ingredients

1 1/2 cups flour
1 cup white sugar
4 tbsp unsweetened cocoa powder
1 tsp baking soda
1/2 tsp salt
1 tsp vanilla extract
1 tbsp lemon juice (or vinegar)
6 tbsp veggie oil
1 cup water
Directions
1. Preheat oven to 350 degrees F (175 degrees C).
2. Sift flour, sugar, salt, soda, and cocoa together into an 8x8 inch ungreased cake pan. Make three depressions. Pour oil into one well, lemon juice (vinegar) into second, and vanilla into third well. Pour water over all, and stir well with fork.
3. Bake at 350 degrees F (175 degrees C) for 30 to 40 minutes, or until tooth pick inserted comes out clean. Frost with your favorite icing or sprinkle with icing sugar.

This is also a favorite recipe of our family. I have made this cake for many years per request of family members, but I put a peanut butter frosting on mine, which makes it even more popular. My recipe is for a large cake (double your recipe) and calls for vinegar, not lemon juice. It is so yummy! - 10/30/08
